Sourced from Pioneer Producers in Northern Huila, in the municipalities of Algeciras, Iquira, and Palermo, this coffee comes from the Castillo, Caturra, and Colombia varieties growing between 1,500 and 2,000 meters above sea level.

About The Producer

The producers use a carefully refined fermentation method called fermentación por cochadas, developed through years of collaboration. The process takes two days and one night, with freshly harvested cherries added in three stages before a final 60-hour fermentation.

Drying is just as meticulous—first, the beans rest on raised beds for 15 to 30 days, allowing the flavors to develop naturally. Then, they’re finished in mechanical dryers for up to 40 hours, ensuring the perfect moisture balance.
